Overview
Dornoch, in a converted Victorian fire station beside Dornoch Castle Hotel, is a tiny distillery with an outsized reputation. Run by the Thompson brothers, it has become a cult name among whisky enthusiasts for its old-fashioned methods — heritage barley, brewer’s yeast, worm tubs — and its sought-after independent bottlings.
The history
The Thompson family, who run the celebrated whisky bar at Dornoch Castle Hotel, built their micro-distillery in the old fire station and began distilling in 2016–17. Demand has been such that they are building a larger new distillery, Struie, nearby.
The water & the land
Dornoch uses ceramic-filtered local water.
Dornoch had no founding clan, but the ancient cathedral town of Dornoch is the county town of Sutherland, in historic Clan Sutherland and Murray country — the last place a witch was executed in Scotland.
Visiting
Dornoch has no formal visitor centre — the place to experience it is the famous whisky bar and shop at Dornoch Castle Hotel; check the website. Dornoch itself, with its cathedral and championship golf links, is well worth the visit.
